Think back to last Thanksgiving, when you sliced into that turkey breast and it came out dry, white and stringy, and everybody reached for the gravy before they took a bite. You didn't do one thing wrong. In my mama's house in Macon, Georgia, Thanksgiving was never a big roasted bird. It was a deep pan of turkey wings smothered in onion gravy, and nobody ever chewed on a dry piece of turkey at that table.
Today I'll show you what Mama did to every piece of turkey the night before it saw the oven (ten minutes of work), and the government number about turkey that changed 20 years ago without anybody telling the women doing the cooking.

WHAT YOU NEED (feeds 6 with leftovers)
2 trays turkey wings (about 5 lb), tips kept
Seasoning: 2 Tbsp seasoned salt, 1 Tbsp garlic powder, 1 Tbsp onion powder, 1 Tbsp paprika, 2 tsp black pepper, 1 tsp poultry seasoning
A little oil · 1 large yellow onion, 1 green bell pepper, 2 ribs celery (chopped) · 4 cloves garlic · chicken broth (halfway up the wings)
Gravy: about 1/3 cup of the pan fat (or butter), 1/3 cup all-purpose flour, the pan liquid, black pepper
METHOD
1. Night before: pat the wings dry (don't wash them), rub the seasoning on heavy, cover and refrigerate overnight.
2. Wings out 30 minutes before. Oven to 350°F.
3. Brown the wings skin side down in a hot heavy skillet, in batches. Move them to a baking pan.
4. Soften the onion, pepper and celery in the drippings about 5 minutes, scraping up the brown bits. Garlic for the last minute.
5. Pour over the wings, add broth halfway up, tuck the tips around the sides.
6. Cover tight with foil. Bake about 2 hours, until the meat slides off the bone (another 20-30 minutes if it fights you).
7. Gravy: stir the fat and flour about 5 minutes until it's the color of a paper bag, then whisk in the pan liquid a little at a time until it coats a spoon.
8. Pour the gravy over the wings and bake uncovered about 20 more minutes.
Serve over white rice with greens and cornbread.
PRICES (walmart.com, checked October 2026; prices vary by store)
Fresh turkey wings, 2-3 lb tray: about $9.54. Whole frozen turkeys are usually cheaper per pound, often under $1/lb on sale in November. Wings win on time, thawing and leftovers, not on price per pound.
FOOD SAFETY
Turkey is safe at 165°F. Thaw a whole bird in the refrigerator about 24 hours for every 4-5 lb. Refrigerate leftovers within 2 hours, eat within 3-4 days, and reheat to 165°F.
