Yes, I still eat chocolate, but I absolutely do not eat refined sugar! 🤎 Today, I am showing you how to make the most decadent, chewy chocolate oatmeal cookies right at home. This recipe uses absolutely no flour, no butter, and no added sugar. Instead, we are using a brilliant little baking hack: soaking raisins in hot water and mashing them into a sweet, sticky caramel-like paste to hold our cookies together! They are packed with fiber from the oats and chia seeds, and topped with a thick layer of sugar-free dark chocolate. Grab your favorite tea or coffee, relax, and let's bake together! Don't forget to like and subscribe if you want more healthy, relaxing baking videos! 😊 🥣 Ingredients The Binder: 1 tbsp chia seeds + 5 tbsp water (let sit for 10 mins to form a "chia egg") The Sweetener: 1/2 cup raisins (soaked in hot water) The Wet Base: 1/4 cup (60ml) natural yogurt, 2 tbsp melted coconut oil, and a splash of lemon juice The Dry Base: 1 heaped cup (120g) rolled oats, 1/2 cup (60g) oat flour, 1 tbsp cocoa powder, and 1/2 tsp baking soda and a pinch of salt The Crunch: 1/4 cup (30g) chopped almonds and 2 tbsp (20g) pumpkin seeds The Topping: Sugar-free chocolate (melted, for dipping or spreading on top) 👩‍🍳 Baking Instructions Prep: Preheat your oven to 175°C (350°F). Make your chia egg and mash your soaked raisins. Mix: In a large bowl, combine the chia gel, yogurt, coconut oil, lemon juice, and the mashed raisin paste. Combine: Stir in the oats, oat flour, cocoa powder, and baking soda until a thick dough forms. Fold & Shape: Gently fold in your chopped almonds and pumpkin seeds. Scoop the dough onto a parchment-lined tray and flatten them into cookie shapes. Bake & Coat: Bake for 12 to 15 minutes.
