Most People Are Making Steak Stir-Fry Wrong! The Peruvian Lomo Saltado Way
Gray meat. A puddle of water in the pan. Tomatoes melted into mush. If your steak stir-fry always comes out like beef soup, mijo, it was never you. Nobody told you the one thing the cooks in Lima do with their hands, and it takes ten seconds.
Lomo saltado was born when Chinese families came to Peru more than 150 years ago and brought their woks and their soy sauce. Peru gave them beef, tomatoes, and ají amarillo, and the world got the most famous Peruvian dish after ceviche. Today I'll show you how to make it like a restaurant in Lima, in 15 minutes, on a regular stove. No special wok. No fire tricks.
⭐ TODAY'S RECIPES (in my cookbook)
• Lomo Saltado: Peruvian steak stir-fry (page 54)
• Tacu Tacu: crispy rice and bean cake, for the leftovers (page 45)
• Arroz Chaufa: Peruvian-Chinese fried rice (page 43)
• Chicha Morada: the purple corn drink (page 114)

❌ THE 5 MISTAKES THAT TURN STIR-FRY INTO SOUP
1. Cutting the meat along the grain (cut ACROSS the lines)
2. Putting wet meat in the pan (dry it, or it steams)
3. Too much meat at once: the big one. One handful at a time, and don't touch it
4. Adding the tomatoes too early (30 seconds, at the very end)
5. Letting the fries soak in the sauce (crispy first, in at the last second)
🔥 THE RESTAURANT TRICK
Pour the soy sauce and vinegar around the EDGE of the hot pan, not in the middle. The hot metal sizzles it into a smoky, shiny sauce, the flavor of the restaurant without any fire.
💬 THE HONEST WORDS
• My meat came out tough → cut across the grain, thinner strips, and only 1 minute + 30 seconds per batch.
• My sauce is too salty → use low-sodium soy sauce, or 2 tablespoons instead of 3.
• No cast iron? → use your heaviest pan. Nonstick: medium-high and even smaller batches.
• Can I make it ahead? → prep everything ahead, cook it right before eating. 15 minutes, fridge to table.
• No beef? → chicken thighs (pollo saltado) or thick mushrooms (saltado de champiñones). Same method.
Tell me in the comments: have you ever tried lomo saltado at a Peruvian restaurant? Where? I read every one, mijo.
