Homemade Country Sausage Gravy 1 pound sausage 1/3 cup all-purpose flour 4 cups whole milk 3/4 teaspoon seasoned salt 1 teaspoon black pepper In a large skillet over medium -high heat, brown the sausage, chopping it into small chunks as it fries. Once it is no longer pink, reduce the heat to medium- low and sprinkle in about half the flour. Stir well until flour is absorbed by the sausage and grease. Repeat with the rest of the flour. Cook for another 1 to 2 minutes. Pour in about half the milk and stir well. Add the rest of the milk, stirring constantly. Cook the gravy, stirring constantly, until it thickens for about 10 minutes. Sprinkle in the seasoned salt and pepper and continue stirring until it is to the thickness you prefer. If it becomes too thick, add another 1/4 to 1/2 cup of whole milk.
