RECIPE:
🛒 Ingredients
For the soaked raisins
1 cup raisins (chop some of them if you prefer)
¾ cup Dragon Stout or Guinness
¼ cup red wine
100 ml rum (approximately 1 shot, depending on the pour)
Method:
Combine the raisins, stout, red wine and rum in a bowl or container. Cover and leave to soak overnight, or for as long as you like to allow the raisins to absorb the flavours.
For the wet ingredients
¼ cup white sugar
¼ cup brown sugar
1 tbsp molasses
1 tsp vanilla bean paste
1 egg
1 tsp rose and almond flavouring
2 tbsp honey
½ tsp browning
½ cup stout
For the dry ingredients
2 cups all-purpose flour
2 tsp baking powder
1 tbsp ground cinnamon
½ tbsp ground nutmeg
½ tbsp ground allspice
For the brown butter
5 tbsp butter, melted and browned
For the glaze
A small amount of butter, melted (est 2 tbs)
1 tsp white sugar
1 tsp vanilla bean paste
👩🏾🍳 Instructions
Step 1: Soak the raisins
Combine the raisins, stout, red wine and rum. Cover and leave to soak overnight, or longer if desired. Shorter time if desired as well.
Step 2: Mix the wet ingredients
In a large bowl, combine the white sugar, brown sugar, molasses, vanilla bean paste, egg, rose and almond flavouring, honey, browning and stout. Mix until everything is well combined.
Add the soaked raisins along with their soaking liquid and mix again.
Step 3: Combine the dry ingredients
In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg and allspice. Mix well to distribute the spices evenly.
Step 4: Make the batter
Gradually add the wet ingredients to the dry ingredients, mixing until well incorporated.
Add the 5 tablespoons of melted brown butter and mix again until combined.
Step 5: Prepare for baking
Grease your baking dish with butter or baking spray. Pour the batter into the prepared dish.
Sprinkle some additional raisins over the top and gently press them into the batter.
Step 6: Bake
Bake in a preheated oven at 350°F (175°C) for approximately 1 hour, or until a skewer inserted into the centre comes out clean.
Step 7: Prepare the glaze
In a small saucepan over low heat, combine a little melted butter, 1 teaspoon of white sugar and 1 teaspoon of vanilla bean paste. Stir until combined and the sugar has dissolved.
Step 8: Glaze and rest
Once the spice bun comes out of the oven, brush the glaze over the top while it's still warm. Allow the bun to rest before slicing and serving.
Serving suggestion: Enjoy a slice of Jamaican spice bun with cheese, butter or a cup of tea!
