Kashmiri Gobhi Yakhni Recipe | Seema Kashmiri Cook Writing Kashmiri Gobhi Yakhni (Cauliflower in Yogurt Gravy) Preparation Time: 15 minutes Cooking Time: 30–35 minutes Servings: 3–4 people Ingredients 1 medium cauliflower (gobhi), cut into florets 1½ cups plain yogurt (curd) 3 tablespoons mustard oil 1 teaspoon cumin seeds (jeera) 1 teaspoon fennel powder (saunf powder) ½ teaspoon dry ginger powder (saunth) 2 green cardamoms 1 black cardamom 1 small piece of cinnamon 3–4 cloves 1 bay leaf ½ teaspoon turmeric powder (optional) Salt to taste 1½–2 cups water, as needed Instructions Step 1: Prepare the Cauliflower Wash the cauliflower thoroughly and cut it into medium-sized florets. Drain the water and set aside. Step 2: Fry the Cauliflower Heat mustard oil in a pan until it reaches its smoking point. Allow it to cool slightly, then heat it again over medium heat. Add the cauliflower florets and fry until they turn light golden. Remove them from the pan and set aside. Step 3: Prepare the Yogurt Mixture Whisk the yogurt until smooth. Add the fennel powder, dry ginger powder, and a little water. Mix well to make a smooth mixture without lumps. Step 4: Add the Whole Spices In the same pan, add the cumin seeds, green cardamoms, black cardamom, cinnamon, cloves, and bay leaf. Sauté for a few seconds until fragrant. Step 5: Cook the Yogurt Gravy Reduce the heat to low. Slowly add the whisked yogurt mixture while stirring continuously. Cook gently for 5–7 minutes, stirring constantly to prevent the yogurt from curdling. Do not let the gravy boil rapidly. Step 6: Add the Cauliflower Add the fried cauliflower florets and salt. Mix gently so that the cauliflower is coated with the yogurt gravy. Add 1½–2 cups of water, depending on your preferred gravy consistency. Step 7: Simmer Until Tender Cover the pan and cook over low heat for 15–20 minutes, or until the cauliflower becomes tender and absorbs the flavors of the spices. Stir occasionally and adjust the salt and water as needed. Step 8: Serve Your delicious Kashmiri Gobhi Yakhni is ready! Serve it hot with steamed rice or Kashmiri-style rice. Tips for Perfect Kashmiri Gobhi Yakhni Use fresh, full-fat yogurt for a rich and creamy gravy. Whisk the yogurt thoroughly before adding it to the pan. Keep the heat low when cooking the yogurt to help prevent curdling. Fennel powder and dry ginger powder give the dish its characteristic Kashmiri flavor. For a more traditional yogurt-based version, skip the turmeric. Serving Suggestion Enjoy this delicious Kashmiri Gobhi Yakhni with steamed rice for a comforting, traditional-style meal.
