📝 Ingredients
Ghee – 3 tablespoons
Sunflower oil – 4 tablespoons
Ginger – 1 small piece, finely chopped
Green chillies – 4
Cinnamon – 4 small pieces
Bay leaves – 4
Shahi jeera – 1 tablespoon
Cloves – 4
Poppy seeds – 1 tablespoon
Stone flower (Kalpasi) – 3 pieces
Turmeric powder – 1 teaspoon
Chilli powder – 1 teaspoon (or as needed)
Curd – 1 ladle
Garam masala – 1½ teaspoons
Cumin powder – 1 tablespoon
Coriander powder – 1 tablespoon
Salt – as needed
🥕Vegetables
Potato – 3 medium-sized
Carrot – 3 big
Beans – about ¼ kg
Green peas – 1 cup (frozen peas can be used)
Onion – 3
🍚 Rice
Basmati rice – 2 glasses
Water – 4 glasses
👩🍳 Method
1. Prepare the rice:
Wash 2 glasses of basmati rice well and soak it for about 30 minutes.
2. Heat the oil and ghee:
Heat a pot and add 3 tablespoons of ghee and 4 tablespoons of sunflower oil.
3. Add the whole spices:
Once hot, add bay leaves, cinnamon, shahi jeera, cloves, and stone flower (kalpasi). Sauté until fragrant.
4. Add ginger and green chillies:
Add the finely chopped ginger and green chillies. Sauté well.
5. Add the spice powders:
Add turmeric powder, chilli powder, garam masala, cumin powder, and coriander powder. Mix well.
6. Add curd:
Add 1 ladle of curd and mix everything well. Cook for a minute.
7. Add the vegetables:
Add the onions, potatoes, carrots, beans, and green peas. Mix everything thoroughly and sauté for a few minutes.
8. Add water:
Add water and allow the vegetables to cook until they are about half-cooked.
9. Add the soaked rice:
Once the vegetables are partially cooked, add the soaked and drained basmati rice.
10. Adjust the water:
For 2 glasses of basmati rice, add 4 glasses of water. Since some water may already be present from cooking the vegetables, adjust the quantity accordingly.
11. Add salt:
Add salt as needed and gently mix everything together.
12. Cook the Pulao:
Cover the pot and cook on medium heat. Since I am making it directly in a rice-cooking pot, I am not using the whistle method. It takes around 20 minutes.
13. Check while cooking:
Occasionally check the rice. If the water is not sufficient, add about ¼ glass of water, mix gently, and cook for another 10 minutes.
14. Finish:
Once the rice is completely cooked and fluffy, switch off the stove. Let it rest for 30 mins before serving.
🍚 Delicious vegetable Pulao is ready! Serve hot with curd or raita and enjoy.
Note :
If you’re making it in a normal pressure cooker . Follow the same procedure and cook for 2 whistles. Once it’s done, the rice will turn out nice, fluffy, and separate, just like this.
For regular raw rice, use 3 cups of water for 1 cup of rice and cook for 2 whistles. It will come out perfectly fluffy and separate.
