Ingredients
For Sesame Powder
• Sesame seeds – ¼ cup
• Urad dal – 1 tablespoon
• Dry red chilies – 4
For Tempering
• Cooked rice – 4 cups
• Ghee – 1 tablespoon
• Mustard seeds – 1 teaspoon
• Cumin seeds – ½ teaspoon
• Peanuts – 2 tablespoons
• Chana dal – 1 tablespoon
• Dry red chilies – 2
• Curry leaves – 1 sprig
• Salt – to taste
Step-by-Step Procedure
Step 1: Roast the dry red chilies
Heat a kadai and add 4 dry red chilies. Roast them lightly until aromatic, then transfer them to a plate. Avoid roasting them for too long.
Step 2: Roast the urad dal
In the same kadai, add 1 tablespoon of urad dal. Roast until it turns lightly golden.
Step 3: Roast the sesame seeds
Add ¼ cup of sesame seeds and roast on low heat until they release a pleasant aroma and begin to pop lightly. Transfer them to a plate before they become too dark, as over-roasting can make them bitter.
Step 4: Prepare the sesame powder
Allow the roasted ingredients to cool completely. Add the sesame seeds, urad dal, and roasted red chilies to a mixer. Grind into a slightly coarse powder.
Step 5: Prepare the tempering
Heat 1 tablespoon of ghee in a kadai. Add 1 teaspoon of mustard seeds and ½ teaspoon of cumin seeds.
Add 2 tablespoons of peanuts and 1 tablespoon of chana dal. Fry until they become crunchy.
Step 6: Add the remaining ingredients
Add 2 dry red chilies and 1 sprig of curry leaves. Fry for a few seconds until aromatic.
Step 7: Mix the rice
Add 4 cups of cooked rice. Make sure the rice grains are separate and not mushy.
Add the prepared sesame powder and salt to taste. Mix everything gently so the rice grains remain intact and the sesame powder spreads evenly.
Step 8: Serve
Traditional Nuvvula Annam is ready! Serve it as Navaratri prasadam or enjoy it as a delicious South Indian rice dish.
Tips for Perfect Nuvvula Annam
• Roast sesame seeds on low heat to preserve their flavour.
