🍚 Restaurant rice at home, the Japanese way: wash it 3-4 times, soak it, measure the water, let it rest with the lid on, and cut it with a paddle. Plus sushi rice seasoning, the mistakes and fixes, and the math behind the yearly savings. Everything is below 👇
Hook: your rice comes out sticky, hard in the middle or mushy because of a few small steps nobody told you. It was never you.
THE METHOD
1. Wash: cold water, move the grains with your hand, pour off the cloudy water. 3-4 times, until the water is MOSTLY clear.
2. Soak: cover with cool water, 30 minutes in summer, a full hour in the cold months. Drain a few minutes.
3. Water: use the lines in your rice cooker. On the stove, the same cup for both: about 1 cup Japanese short grain rice to 1 1/5 cups water.
4. The yearly savings: a weekly takeout rice side vs. a home serving (the full math is in the video; check it against your own receipts).
5. Rest: heat off, lid on, 10 minutes. Do not open the pot.
6. The paddle (shamoji): cut, lift, turn for about 30 seconds. Never stir like soup.
7. Sushi rice: for about 2 cups of uncooked rice, 5 tbsp rice vinegar, 2 1/2 tbsp sugar, about 1 1/3 tsp salt, warmed, cut into the hot rice.
