🥩 A cheap $6 steak, the Japanese way: grated onion (or Asian pear), salt early, a very hot pan, flip every 30 seconds, rest, and slice across the grain. The whole method is below 👇 It will not be wagyu, and I will not pretend it is. But a cheap cut cooked the old way can beat an expensive ribeye cooked the usual way. Nobody showed you the order. It was never you. THE METHOD 1. Grate 1 small yellow onion (or 1 Asian pear) per pound of meat, mix with a spoon of soy sauce. Covered, in the fridge, 2 hours at most (longer turns the meat mushy). 2. Pat the steak dry. 1 level teaspoon of kosher salt per pound, both sides, uncovered in the fridge at least 40 minutes, best a whole day. 3. Out of the fridge 30 minutes before cooking. Wipe off thick onion. 4. Very hot cast iron (about 5 minutes on high), a little oil, flip every 30 seconds, 4-6 minutes. 5. Thermometer in the thickest part, from the side. Rest at least 3 minutes. 6. Slice thin, ACROSS the grain, one long pull of the knife. Pour the juices over. Best cheap cuts: chuck, flank, skirt, top sirloin, round (slice very thin, do not overcook). Tare sauce: 1/2 cup soy sauce, 1/4 cup mirin, 1 tbsp sugar, 2 tbsp sake, simmer 5 minutes. ⚠️ SAFETY: USDA safe temperature for whole cuts of beef is 145 F (63 C) plus a 3-minute rest; ground beef 160 F (71 C). Never use raw marinade as a sauce unless you boil it hard for at least 5 minutes. Refrigerate leftovers within 2 hours and eat within 3-4 days.
