Apple Pie Cookies in a Muffin Tin 🍎
Ingredients
For the Cookie Dough:
150 g butter (softened at room temperature)
½ tea glass (approx. 50 ml) vegetable oil
1 egg
2 tablespoons yogurt (preferably slightly watery)
1 cup powdered sugar
1 packet vanilla sugar (or 1 tsp vanilla extract)
3–4 cups flour (add gradually)
For the Apple Filling:
4–5 large apples
5 tablespoons granulated sugar
1 teaspoon ground cinnamon
Instructions
Preparing the Dough: Place all dough ingredients except the flour into a mixing bowl and mix well. Gradually add the flour while kneading until you get a soft, non-sticky dough. Set a small portion of the dough aside to use for the top topping later.
Preparing the Filling: Peel and grate the apples. Squeeze out any excess juice with your hands, then transfer them to a pan. Add the sugar and cinnamon, cooking over low heat until the apples release their juices and cook down completely. Remove from heat and allow to cool fully.
Shaping: Take walnut-sized pieces of dough and press them into the muffin tin cups, using your fingers to shape them along the bottom and sides to create a well. Fill each cup with the cooled apple mixture.
Topping: Take the reserved portion of dough and crumble it over the apples using your hands, or grate it over the top. (Note: If you are not using muffin paper liners, make sure to grease the tin thoroughly with butter beforehand).
Baking: Bake in a preheated oven at 185°C (365°F) without fan for about 25 minutes. Baking time may vary depending on your oven; they are ready when the tops turn light golden brown.
Serving: Allow the cookies to cool completely before removing them from the tin. Dust generously with powdered sugar before serving.
Your perfect bite-sized apple pie cookies are ready to enjoy!
