This easy bread kunafa recipe is a great alternative when traditional kunafa pastry (kataifi) isn’t available. It has a crispy, buttery top and bottom with a creamy milk filling.
Ingredients
For the bread layer
8–10 slices white bread (crusts removed)
½ cup (115 g) unsalted butter, melted
For the cream filling
2 cups (500 ml) milk
3 tbsp cornstarch
2 tbsp sugar
½ cup heavy cream (optional, for richness)
1 tsp vanilla extract
For the sugar syrup
1 cup sugar
½ cup water
1 tsp lemon juice
1 tsp rose water or orange blossom water (optional)
Garnish
Chopped pistachios
Dried rose petals (optional)
Instructions
1. Make the syrup
1. Combine sugar, water, and lemon juice in a saucepan.
2. Simmer for 8–10 minutes until slightly thickened.
3. Stir in rose water or orange blossom water, if using.
4. Let cool completely.
2. Prepare the cream
1. Mix the cornstarch with a little cold milk until smooth.
2. Add the remaining milk and sugar.
3. Cook over medium heat, stirring continuously until thick.
4. Stir in the heavy cream and vanilla.
5. Remove from heat and let cool slightly.
3. Prepare the bread
1. Remove the crusts.
2. Flatten each slice with a rolling pin.
3. Brush both sides generously with melted butter.
4. Assemble
1. Preheat the oven to 180°C (350°F).
2. Arrange half of the buttered bread slices in a greased 8-inch (20 cm) baking dish, slightly overlapping.
3. Spread the cream evenly over the bread.
4. Cover with the remaining bread slices.
5. Brush the top with any remaining butter.
5. Bake
Bake for 25–35 minutes, or until the top is deep golden and crisp.
For extra color, broil for 1–2 minutes at the end, watching carefully.
6. Finish
Pour the cooled syrup evenly over the hot kunafa.
Let it rest for 10–15 minutes so the syrup is absorbed.
Sprinkle generously with chopped pistachios before serving.
Tips
Brioche or milk bread makes an even richer version.
For a stretchy filling, replace the cream with 200–250 g shredded mozzarella (low-moisture) or use half mozzarella and half cream filling.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
