I have two plates in front of me and I made both this morning, twenty minutes apart, out of the same bag of flour. One is hard, heavy and dark. The other puffed up like a small pillow and has steam in the middle of it. Same flour. Same baking powder. Same pan. And I did not change the recipe between them — because the recipe was never the problem. What we go through: 1. There are THREE Jamaican dumplings and they are not the same dough — spinner, festival, fried 2. The dough is soft. Softer than you think is correct — and why you must not add more flour 3. Do not knead it like bread, and the fifteen minutes that do half the work 4. Your baking powder is probably dead — the hot-water test that takes ten seconds 5. THE OIL IS MEDIUM, NOT HOT — this is the whole difference between the two plates 6. Do not crowd the pan, and turn it exactly once 7. What "puffy" actually means, and the honest limit nobody admits A fried dumpling is not fried so much as it is baked in oil. It wants time and gentle heat, and every mistake in that hard plate comes from treating it like something that needed to be seared. Do not change your recipe — change the dial. Medium heat, dough one notch softer, six minutes a side instead of two. Then tell me in the comments what you eat yours with, because I know there are three camps on that and I would like to see them argue. --- Miss Enid is a composite educational character, voiced and rendered with AI.
