Cooking for one shouldn't mean skipping a real dinner. In this video, Grandma Peach shares 6 slow cooker dinners (crockpot dinners) for seniors living alone. Each needs only 3 ingredients and no chopping, and each makes three meals for one person, or dinner for two with leftovers.
Before you start: a small 2- to 3-quart slow cooker works best. Let your meat defrost completely in the fridge, layer potatoes at the bottom where the heat is strongest, and resist peeking while it cooks. Salt, pepper, water, and a little butter are already on your countertop, so they're not part of the three.
TODAY'S 6 DINNERS
1. Sunday Pot Roast
You need: 1½ lb chuck roast, 1 lb baby potatoes, ½ envelope dry onion soup mix (plus ½ cup water)
Cook: low for 7 to 8 hours, until the beef pulls apart with a fork
2. Chicken and Dumplings
You need: 1 lb boneless chicken, 1 can cream of chicken soup (plus 1 can water), 4 refrigerated biscuits
Cook: low for 5 to 6 hours until the chicken hits 165°F, shred it, top with torn biscuit pieces, then high for 45 minutes without lifting the lid.
3. Smothered Pork Chops
You need: 3 thick pork chops, 1½ lb baby potatoes, 1 can cream of mushroom soup
Cook: low for about 6 hours, to 145°F, then rest 3 minutes.
4. Three-Can Chili
You need: ¾ lb lean ground beef, 1 can chili beans in sauce, 1 can diced tomatoes with green chiles
Cook: low for 5 to 6 hours, one quick stir at the 2-hour mark, done at 160°F
5. Split Pea Soup with Ham
You need: 1 cup dried split peas, 1 cup diced cooked ham, 2 cups chicken broth (plus 1 cup water)
Cook: low for about 8 hours, until thick and smooth. No soaking needed, just a rinse.
6. Thanksgiving Turkey for One
You need: 1 lb turkey breast tenderloin, 1 package of pre-cut sweet potatoes (plus ¼ cup water), whole-berry cranberry sauce
Cook: low, start checking at 4 hours, done at 165°F
KEEPING LEFTOVERS SAFE
• Get them into the fridge within 2 hours, and finish them in 3 to 4 days.
• Warm them up on the stove or in the microwave until steaming hot (165°F). The slow cooker heats too slowly for reheating.
• A food thermometer is the surest way to know dinner is done.
• Watching your salt, sugar, or anything else for your health? Check with your doctor or dietitian about which recipes suit you.
