If you love Apple Fritters you’re gonna love this recipe! A beautiful soft sourdough with a yummy cinnamon sugar butter with fresh apples topped off with a sweet glaze.
Preparing your dough the night before allows the bulk ferment of 8-12 hours. Super easy!
Prep time: 15 min
Total time: 13 hours
Serving: 1 Focaccia
Recipe:
Dough:
The night before baking mixed together
100 g active starter
375 g of filtered water
30 g of honey
500 g of bread flour
10 g of salt
Do one set of stretch and folds, and 3 to 4 sets of coil folds. (this process can be cut back to just a couple stretch and folds for time purposes)
Let it sit on the counter overnight for 8 to 12 hours. This part is very flexible.
(any over proof dough will also work for this!)
Method:
• Melt a stick of butter and use some to grease a 9 x 13 baking pan. Use the rest to make the cinnamon and brown sugar butter. (Ingredients below.)
Cinnamon sugar butter:
One stick of unsalted melted butter
One to 2 tablespoons of cinnamon
1/4 to 1/2 cup brown sugar
Top with one to two peeled sliced apple
• Add the dough to the baking pan and pour the cinnamon butter mixture on top then top with peeled sliced apples.
• dimple dough to incorporate mixture together.
• cover with foil and bake at 425°F for 15 minutes. Remove foil and bake for another 20 minutes uncovered.
• make glaze while baking. (ingredients below)
Glaze:
One cup powdered sugar
1 teaspoon vanilla
One to 2 teaspoons milk or creamer
• remove focaccia from the oven and glaze the top. Let cool for 10-15 minutes
Slice and enjoy!
