Close your eyes for a moment.
A kitchen somewhere in Naples.
The windows open.
Birds singing outside.
The smell of garlic and rosemary already in the air before anything has even started cooking.
This is where this pasta was made.
And in this video — you will hear every single second of it.
Pasta alla Zucca is one of the most traditional, most authentic, and most beloved fall recipes in all of Italian cooking. In the south of Italy — in the countryside around Naples, where pumpkins grow between the vineyards and the air smells like earth and herbs — this dish has been made every October for generations.
Crispy pancetta rendered slowly in olive oil.
Garlic and rosemary blooming in the fat left behind.
Fresh pumpkin cubed and cooked until just tender — half crushed in the pan, half blended with the garlic and pancetta fat into a smooth, deep orange cream.
Heavy cream stirred in. Parmesan grated fresh. Rigatoni tossed until every single piece disappears into that silky, rich, impossibly creamy sauce.
Crispy pancetta on top. Fresh thyme. Done.
This is the original Italian pumpkin pasta — Pasta alla Zucca — the way it has always been made. Not adapted. Not simplified. Made exactly as it is made in Naples, in October, when the pumpkins are fresh and the evenings are cool and dinner is the most important thing in the world.
Perfect for Halloween. Perfect for a cozy fall night. Perfect for anyone who has never understood why Italians get so emotional about food — until now.
INGREDIENTS (1 serving):
Rigatoni — 90g / 3 oz
Pumpkin — 150g / 1 cup, cubed
Pancetta — 60g / 2 oz, diced
Garlic — 2 cloves, crushed and peeled
Fresh rosemary — 1 sprig
Fresh thyme — a few sprigs
Heavy cream — 80ml / ⅓ cup
Parmesan — 25g / ¼ cup, freshly grated
Olive oil — 1½ tablespoons
Salt — to taste
Pasta water — ⅓ cup — save before draining
HOW TO MAKE IT:
Step 1 — Heat a skillet over medium heat. Add olive oil. Add diced pancetta. Toss and stir until golden and crispy. Remove pancetta and set aside — leave all the fat in the pan.
Step 2 — Add crushed garlic and rosemary to the pancetta fat. Stir. Cook 2 minutes until fragrant and the flavors come together.
Step 3 — Add cubed pumpkin. Toss to coat. Season with salt. Add a small splash of water. Cook 8-10 minutes stirring occasionally until just tender.
Step 4 — Crush half the pumpkin directly in the pan. Stir to combine. Transfer remaining pumpkin, garlic, and a spoonful of pancetta fat to a blender. Blend until completely smooth and creamy.
Step 5 — Boil heavily salted water — it should taste like the sea. Cook rigatoni al dente — 1 minute less than package. Save ⅓ cup pasta water before draining.
Step 6 — Pour heavy cream into the skillet. Stir. Add the blended pumpkin cream. Stir to combine. Add pasta water. Grate in Parmesan. Stir until glossy and silky.
Step 7 — Add rigatoni. Toss with tongs and shake the pan continuously until every piece is fully coated and the sauce is creamy and unified.
Step 8 — Add fresh thyme. Plate immediately. Top with crispy pancetta and thyme sprigs. Serve hot.
