In 2016, a president and a world-renowned chef sat on simple plastic stools in Hanoi to enjoy a humble bowl of bun cha. That moment showed people around the world that sometimes, the most memorable culinary experiences come from the simplest and most familiar dishes. Today, in my own small kitchen, I’m preparing Hanoi-style bun cha in my own way.
