Nepal Floods GoFundMe's: https://www.gofundme.com/c/act/how-to... carbonara Ingredients: pasta (of any shape), egg yolks, pecorino romano, pancetta (but guanciale is best), salt, black pepper for this video, I used about half of a box, 4 egg yolks, 3/4 cup pecorino, and a 1/2 pound of pancetta Recipe: 1. grate pecorino romano into a bowl and mix with egg yolks 2. slice and cook pancetta on medium heat. the fat should begin to render and get jelly-like. cook until the meat begins to get color on all sides, then lower heat 3. boil pasta and cook to al-dente 4. add pasta water to the yolks and pecorino in small amounts, mixing as you go. this will temper the eggs so that they do not solidify and melt the cheese without causing it to seize up. tip for sauce: allow eggs and cheese to come to room temperature first, as the hot water will be more harsh on cold eggs/cheese and potentially cause issues with the sauce coming together 5. remove pancetta from the pan and excess fat. 6. add black pepper to pan, mix quickly and add pasta water to deglaze the pan. 7. add pasta straight from the pot and turn the heat off of both stove eyes. continue to mix. 8. take the pan off of the heat and add the yolks/cheese mixture to the pan. continue to mix thoroughly. if the sauce is too thick, add reserved pasta water until you reach the desired consistency (note: the sauce will thicken as it cools) 9. either mix in pancetta, or plate the pasta and add pancetta on top. add an extra few cracks of pepper, another shredding of cheese, and you're golden! 10. congratulate yourself and enjoy.
