Isaiah Rashad. Cruelty culture. Protecting tenderness. Let's all be soft.
(p.s. this is season 2 of yapmeals! the first few episodes were a proof of concept, and now that I have learned Davinci Resolve and editing on Windows instead of on Mac, along with developed the format I want for the show, we're rockin' and rollin' :D thank you for tuning in)
Jalapeño Popper Biscuits and Gravy
Ingredients:
Biscuits
2 cups flour
1 tbsp baking powder
¼ tsp baking soda
Generous pinch of salt
1 stick butter, cubed
¾ cup buttermilk
2 jalapeños, diced
1 cup cheddar cheese, plus additional for biscuit topping
Gravy
16 oz breakfast sausage
½ cup flour
2 cups whole milk
1 cup buttermilk
4 oz cream cheese, cubed
Salt + black pepper to taste
Recipe:
Biscuits
Preheat oven to 400 degrees
Mix flour, baking powder, baking soda, and salt
Cut in cold butter
Add cheese and jalapeno to mix; pour over buttermilk and knead
Mix with a cold tool. Knead as little as possible and place dough back in the fridge if needed to keep it cold
Pat the dough out into a rectangle and fold it into thirds. Place dough back in the fridge for at least 10 minutes and repeat this process at least 2 more times
Cut the dough into equal biscuits and place onto a baking tray. A tray with higher walls and just big enough to pack the biscuits in to where they are touching will lead to biscuits rising high instead of wide. Brush tops of biscuits with buttermilk.
Bake for 15 minutes. Pull baking tray out and top with more cheddar cheese. Bake for another 5 minutes to melt the cheese. If a crispy top is desired and the cheese has not reached the desired consistency yet, turn the broiler on until cheese is golden brown.
Remove biscuits and let rest for at least 5 minutes before serving.
Gravy
Brown sausage in a pan on high heat, breaking it up as it cooks. Add flour once it achieves color. Stir well.
Deglaze pan with half of the whole milk, bit by bit. Stir as you pour.
Once 1 cup of the milk is added, drop heat to medium and add in cubes of cream cheese, salt, and pepper.
Slowly add the rest of the milk while whisking, then add the buttermilk and drop heat to medium-low. Make final adjustments with salt and pepper.
