TUSCAN SALMON DINNER A one pot wonder for an easy and delicious meal when you’re short on time. See our video playlist at:    • Beehive Hill Cottage Featured Videos 2026   A delicious rich and creamy one pan meal of fish with vegetables for a light and easy weeknight or weekend dinner for family and or friends. RECIPE Tuscan Salmon (2 Servings) 2 Sockeye Salmon Portions (or your favorite variety) 8 Cherry Tomatoes 1 Cup Spinach ¾ Cup Heavy Cream ¼ Cup Chicken Broth 1 Tablespoon Olive Oil 1 Small Pat of Butter ¼ Cup Parmesan Cheese (more if desired) (All seasonings below to your specific taste) Salt Pepper Onion and Herb Seasoning ( Mrs. Dash) Garlic (Fresh Grated and Powder) Parsley for garnish DIRECTIONS Melt butter and Olive Oil in skillet on medium heat. Season fish with above listed seasonings and additional to your liking. Place seasoned Salmon Portions in pan with skin side down. Let brown until skin releases from the pan, easily. Flip, removed skin and cook the other side for 3-4 minutes or desired doneness. Remove fish from pan and set aside. FOR THE SAUCE… Place garlic in pan and cook for a few seconds, then add tomato. Cook for a about 1-2 minutes. Add heavy cream and chicken broth. Cook for 2 minutes. Add parmesan cheese and spinach. Season to taste with above seasonings. Add fish back to pan and allow spinach to wilt and sauce to thicken. Approx 5 minutes. Remove from heat and serve the fish, spinach, and tomatoes, over mashed potatoes or mashed cauliflower. Enjoy!!!
