I'm making tikka masala on a weeknight with a jar of simmer sauce from Costco. It takes about 30 minutes. I'm a single dad, and this is the easy version I cook at home.
Ingredients
• 2 chicken breasts
• 1 onion
• a few cloves of garlic
• a little olive oil (I use Graza)
• kosher salt
• 1 cup jasmine rice
• 1 1/2 cups water
• 1 jar Costco simmer sauce (tikka masala or butter chicken)
Start the rice, because it needs the longest. One cup of jasmine rice and one and a half cups of water. I don't wash the rice. Add some kosher salt, bring it to a boil, put the lid on, and leave it on low for 22 minutes. On my stove that's heat 8 until it boils, then down to 3. A regular pot is fine.
While that cooks, cut two chicken breasts into chunks. Salt them like a light snow and let them sit for 30 minutes if you can. That's what keeps the chicken juicy. Slice an onion and leave a little crunch in it. Slice some garlic, and don't let it burn. Put a little olive oil in the pan. Onion and garlic first, then sear the chicken, then pour in the jar of sauce. Let it simmer while the rice finishes.
Pile the rice on a plate and put the sauce on top. Don't go light on the sauce.
