🍽️ Idli, Masala Dosa, Green Chutney & Red Chutney Recipe 🥣 1. Idli Recipe Ingredients 2 cups idli rice 1 cup urad dal 1 tsp methi seeds Salt to taste Water as required Method 1. Wash and soak rice and urad dal separately for 4–6 hours. Add methi seeds with the urad dal. 2. Grind urad dal until fluffy and rice to a slightly smooth batter. 3. Mix both, add salt and keep covered for 8–12 hours to ferment. 4. Grease idli moulds and pour the batter. 5. Steam for 10–12 minutes. 6. Rest for 2 minutes, then remove the soft, fluffy idlis. --- 🥞 2. Masala Dosa Ingredients For dosa batter: Use the fermented idli/dosa batter above. For potato masala: 4 boiled potatoes 1 onion, sliced 1–2 green chillies 1 tsp mustard seeds ½ tsp cumin Curry leaves ½ tsp turmeric Coriander Salt 1–2 tsp oil Method 1. Heat oil and add mustard seeds and cumin. 2. Add curry leaves, green chilli and onion. 3. Cook until the onion becomes soft. 4. Add turmeric, salt and mashed boiled potatoes. 5. Mix well and cook for 2–3 minutes. 6. Heat a dosa tawa and spread the batter into a thin dosa. 7. Add a little oil/ghee and cook until golden and crisp. 8. Place potato masala in the centre and fold. --- 🥥 3. Green Coconut Chutney Ingredients 1 cup fresh coconut ½ cup coriander 2 green chillies Small piece of ginger 1 tbsp roasted chana dal Salt Water as required Tempering 1 tsp oil ½ tsp mustard seeds Curry leaves Pinch of hing Method Grind everything except the tempering into a smooth chutney. Heat oil, crackle mustard seeds, add curry leaves and hing, then pour over the chutney. --- 🍅 4. Red Chutney Ingredients 2 tomatoes 4–5 dried red chillies 2 tbsp fresh coconut 1 small onion 1 garlic clove 1 tbsp roasted chana dal Salt 1 tsp oil Method 1. Heat oil and lightly sauté onion, garlic, tomatoes and red chillies. 2. Cool completely. 3. Grind with coconut, roasted chana dal and salt. 🍽️ Idli, Dosa & Sambar Recipe 🥣 Idli & Dosa Batter Ingredients: 2 cups idli rice 1 cup urad dal 1 tsp methi seeds Salt to taste Water as needed Method: 1. Soak rice and urad dal separately for 4–6 hours. 2. Grind both into a smooth, fluffy batter. 3. Mix well with salt and ferment for 8–12 hours. 4. For idli, pour batter into greased moulds and steam for 10–12 minutes. 5. For dosa, heat a tawa, spread the batter thinly, add a little oil and cook until golden and crisp. 🍛 South Indian Sambar Ingredients: 1 cup toor dal 1–2 tomatoes 1 onion 1 carrot 1 small potato ½ cup bottle gourd or any preferred vegetable 1–2 green chillies 1–2 tbsp sambar powder ½ tsp turmeric Small piece of tamarind Salt Coriander Tempering: 1 tsp oil 1 tsp mustard seeds ½ tsp cumin Curry leaves 1–2 dried red chillies Pinch of hing Method: 1. Pressure-cook toor dal with turmeric until soft and mash it. 2. Cook the vegetables with onion, tomato and green chilli. 3. Add sambar powder, tamarind water and salt. 4. Add mashed dal and simmer for 8–10 minutes. 5. Prepare the tempering and pour it over the sambar. 6. Finish with fresh coriander. ❤️ Serve Serve soft idlis + crispy dosa + hot, aromatic sambar together. You can also add green coconut chutney and red chutney for a complete South Indian breakfast. 4. Add a little water and blend until smooth. 5. Temper with mustard seeds and curry leaves if desired. ❤️ Serving Serve hot crispy masala dosa + soft idlis + green coconut chutney + red chutney with sambar for a delicious South Indian breakfast.
