Somebody's kids looked at a skillet of fried potatoes and hot dogs one night and gave supper the name that outlived the Depression - the poorman's meal - and it was not a complaint. They asked for it. Tonight we make it the way it was actually made: potatoes first, onion late, meat last, because the order is the whole supper.
This episode covers the whole grocery list (half of it is probably already in your kitchen), the slice thickness that decides the meal, the lid-on-then-off trick that makes the centers tender and the edges crisp, every meat substitution families actually used, what the dish really cost, the sides that belong beside it - including the ketchup argument - the morning-after hash that made leftovers a plan, and the honest story of who named it and why the name stuck.
In this video:
1.The supper the kids named, and what the name actually meant
2.The three things on the table - the whole grocery list
3.One skillet in the right order - potatoes first, covered then uncovered, onion late, meat last
4.The meat was whatever was cheap, and why that flex survived
5.What it was eaten with - cornbread, cold milk and the ketchup debate
6.Why the skillet and not the pot - one burner, twenty minutes
7.The morning after - leftovers that become breakfast hash
8.When the table was bigger - the scaling rule that travels
9.The story of the name, told straight
10.The ways families bent it, and making it tonight in a modern kitchen
What did your family call a skillet of fried potatoes and hot dogs - and did yours have a rule about the order?
