A warm Nomoshkar! Today we celebrate winter with a traditional Bengali delight — Paka Machher Roast. Unlike the Western-style roast, our deshi roast is slow-cooked with rich spices, deep aromas, and pure nostalgia. This recipe brings the essence of Kolkata winters straight to your kitchen. Simple ingredients, deep flavours, and a heritage we proudly carry forward. Try this heritage fish roast at home and enjoy it with pulao or steaming hot rice. Subscribe, stay connected, and keep our culinary traditions alive! --- Ingredients (Paka Machher Roast) Rohu/Katla fish (large, oily pieces) Salt Refined oil Ghee Bay leaves Cinnamon (1–1.5 inch) Crushed green cardamoms Onion paste (1 cup) Ginger paste Garlic paste Dry red chilli paste Turmeric paste Whipped curd (150 g) Water Sugar (a few grains) --- Method 1. Marinate big oily fish pieces with salt. 2. Fry them in hot oil and ghee until reddish. 3. In the remaining oil, add bay leaves, cinnamon, cardamom, and sauté onion paste till golden. 4. Add ginger & garlic paste; cook until raw smell disappears. 5. Add red chilli paste, turmeric paste, and little water; sauté till oil releases. 6. Add whipped curd, salt, and a pinch of sugar; cook well. 7. Add water, slide in fried fish pieces, flip once, and cover. 8. Cook for 5 minutes, open lid, add ghee, and reduce gravy until thick. 9.
