👩🍳 *FULL RECIPE — STEP BY STEP*
*1. Prepare the dosa batter*
Wash the rice, urad dal, chana dal and fenugreek seeds thoroughly. Soak them in water overnight.
Drain the water and grind everything with a little water until you get a smooth, pourable batter. Transfer it to a large bowl and whisk by hand for about 5 minutes.
Cover and leave the batter to ferment for 8–9 hours. The time may vary depending on the weather. Once fermented, you should see small bubbles in the batter.
*2. Make the aloo masala*
Heat oil in a pan. Add mustard seeds, green chillies, curry leaves and ginger-garlic paste.
Add finely chopped onions and sauté lightly. Add turmeric powder and red chilli powder, followed by chopped tomatoes and salt.
Cook until the tomatoes soften. Add green peas and cook until tender.
Now add boiled potatoes and mix everything well. Add a little water if you prefer a softer potato filling. Your dosa aloo masala is ready!
*3. Prepare the peanut chutney*
Roast the peanuts and let them cool. Add them to a mixer with 4–5 garlic cloves, green chillies and a little lemon juice. Grind into a smooth paste, adding water as needed.
For the tadka, heat oil in a small pan. Add mustard seeds, curry leaves and a dried red chilli. Add a little red chilli powder for colour, then pour the tadka over the peanut chutney and mix well.
Your peanut chutney is ready!
*4. Make crispy plain dosa*
Heat a dosa tawa over medium heat. Sprinkle a little water on the tawa and wipe it clean with a cloth or tissue.
Pour a ladleful of batter onto the tawa and spread it in circular motions to make a thin dosa.
Drizzle a little ghee around the edges and cook over medium heat until golden and crispy. Once the edges lift easily from the tawa, your plain dosa is ready.
*5. Make crispy masala dosa*
Heat and clean the tawa again. Pour the batter and spread it thinly in a circular motion.
Add a little ghee and sprinkle podi masala if desired. Spread the prepared aloo masala over the dosa.
Cook until the dosa becomes golden and crispy, then fold and serve hot.
Enjoy your homemade crispy masala dosa with peanut chutney and sambar!
