Gulab Jamun Cake Ingredients
For the Cake Batter
½ cup (120 g) desi ghee or butter
½ cup (80 g) powdered sugar
½ cup (120 g) fresh curd (yogurt)
1 cup (150 g) milk powder or dairy whitener
1 tbsp semolina (sooji/rava) (optional)
½ cup (70 g) all-purpose flour (maida)
¾ tsp baking powder
¾ tsp baking soda
½ tsp cardamom powder
1 tsp kewra water or rose water
⅓ cup (90–100 ml) room-temperature milk (adjust as needed)
For the Sugar Syrup
1 cup (200 g) sugar
1 cup (250 ml) water
¼ tsp cardamom powder
A few saffron strands (optional)
Or 1 tsp kewra water/rose water
For Garnishing
Silver leaf (varq) (optional)
Chopped pistachios
Chopped almonds
Dried rose petals (optional)
How to Bake Gulab Jamun Cake on Gas (Kadhai Method):-
Take a deep, heavy-bottomed kadhai with a lid.
Spread 1–1½ cups of salt or sand evenly at the bottom (or place a metal stand/ring if you don't want to use salt).
Cover the kadhai and preheat on medium flame for 10–15 minutes.
Grease an 8-inch cake tin, pour in the batter, and tap it gently to remove air bubbles.
Place the cake tin on the stand inside the preheated kadhai.
Cover the kadhai with a tight-fitting lid (without the whistle if using a pressure cooker).
Bake on low flame for 30–40 minutes. Avoid opening the lid for the first 25 minutes.
Check with a toothpick. If it comes out clean, the cake is done. If not, bake for another 5–10 minutes.
Remove the cake and, while it is still warm, prick it with a toothpick or skewer and pour the warm sugar syrup over it. Let it rest for 10–15 minutes before serving.
Tip: Keep the flame low throughout baking. A high flame can burn the bottom while leaving the center undercooked.
How to Bake Gulab Jamun Cake in an Air Fryer:-
Preheat the air fryer to 160°C for 5 minutes.
Grease an air fryer-safe 6–7 inch cake tin and pour the batter into it.
Tap the tin gently to remove any air bubbles.
Place the tin in the preheated air fryer basket.
Bake at 160°C for 20–25 minutes.
Check with a toothpick after 20 minutes. If it comes out clean, the cake is ready. If not, bake for another 3–5 minutes.
Once baked, remove the cake and immediately prick it all over with a toothpick or skewer.
Pour the warm sugar syrup evenly over the warm cake and let it rest for 10–15 minutes so the syrup is fully absorbed.
Garnish with chopped pistachios, almonds, silver leaf (optional), or dried rose petals, then serve.
Tips:
Every air fryer bakes a little differently, so start checking at 18–20 minutes.
Don't overbake, or the cake may become dry and won't absorb the syrup well.
Use only a tin that fits comfortably in your air fryer basket with some space around it for proper air circulation.
