Make classic Gulab Jamun at home with khoya. These traditional Indian sweets are gently shaped, fried in ghee until golden, then soaked in warm rose-cardamom sugar syrup for a soft center and glossy finish. Saffron and chopped pistachios complete the garnish.
Recipe details
Yield: about 16 jamuns (4 servings)
Active preparation: 20 minutes
Total time: 40 minutes
Method: Stovetop
Ingredients
Khoya, all-purpose flour, a pinch of baking soda, ghee for frying, sugar, water, rose water, cardamom, saffron strands, and chopped pistachios.
Method
Prepare and gently knead the khoya dough. Shape about 16 smooth balls without cracks. Make warm sugar syrup with rose water and cardamom. Fry the balls in ghee over medium-low heat until deep golden, then transfer them to the warm syrup and allow them to soak. Garnish with saffron and pistachios; serve warm.
