We have had a really good harvest of beetroot and more to come so I am thinking of chips, roasts, humous, burgers, ketchup, juice, salad, soup, chutney and more!! Beetroot is a superfood, helping the cardiovascular system and the liver and the blood and it is full of vitamins and minerals. Recipes are below if you would like to try making your own.
Chutney/Jam - 2/2.5lbs of washed and grated beetroot. 1lb onions sliced, handful of raisins, 2 small apples, handful of tomatoes, 2 tsp pickling spice wrapped in a small piece of muslin, ( Peppercorns, Coriander seeds, All Spice, 4-5 Cloves, Sprinkle of Cinnamon, Chilli flakes to suit your taste),1 tsp salt, 5/6 Bay leaves, 1.5lb sugar, 700ml white wine or ACV vinegar - I used a mix of both.
Sauté the onions in a large pan in a little olive oil. Reduce the heat to a simmer. Add the beetroot, tomatoes, apples and raisins and stir well. Add the sugar and stir well until sugar is dissolved. Add spices and Bay leaves and stir well and then add the vinegar. Allow to simmer without a lid for 2-3 hours or until the mixture is thick and gloopy. Stir regularly. The chutney is ready when it is thick and you can push a wooden spoon through it to reveal the base of the pan. Spoon into sterilised jars and label.
Beetroot Humous - place your chickpeas into a blender. Add cooked beetroot, garlic, salt, a squeeze of lemon juice, olive oil and tahini and blend until smooth. Enjoy with crudités or on crackers.
Beetroot Burgers - from the Happy Pear recipe book by David and Stephen Flynn. You will need about 1lb of raw beetroot, onions or scallions to suit you, about 6 ozs strong cheese such as parmesan, cheddar or Gruyère plys about 2ozs Feta cheese. Large handful of walnuts, toasted if preferred, juice of half a lemon, salt and pepper or other herbs and spices that you like.
Gate the beetroot and slice the onions. Sauté until soft and return to a large bowl. When cool, add the cheese and seasonings, lemon juice and walnuts and mix well together. Form the burgers and add flour or egg if necessary. Fry gently for 5 minutes on each side or bake in the oven for 25 minutes. Serve with humous and salad and vegetables.
Beetroot Juice - using raw beetroots, juice alone or add in cucumber and apple.
Beetroot Ketchup - I didn't get to make this on the day but it is definitely worth trying. You will need raw beetroot, onions, garlic, brown sugar, vinegar and spices - Coriander, Black Pepper, Bay Leaves, Nutmeg
Slice or cube the beetroot and roast for about 25 mins. Sauté the onions and garlic. Add the beetroot to the pan with the onions and mix well. Add the brown sugar and spices and stir well. Add the vinegar and simmer in an open pan until the mixture is thick and gloopy and then blend and pour into your sauce bottle.
