It is a sweet made from just three things: a raw vegetable, sugar, and water. Legend says Petha was first created to give a quick glucose boost to the laborers building the Taj Mahal. Today, turning this raw ash gourd, an Ayurvedic super fruit, into a finished sweet takes heavy fire, time, and intense physical labor. This single recipe now drives a ₹500 crore industry. If you walk away from the monuments and step into the steam filled lanes of Noori Gate, you find the real heartbeat of Agra's working class. Artisans here spend days soaking, piercing, and boiling ash gourds brought in from across the country. It is the primary livelihood for around 5,000 local families. Out of thousands of shops, one brand has become completely synonymous with the sweet: Panchhi Petha. Founded nearly a century ago, they built a massive legacy, but today that legacy is under threat. Their popularity has triggered a wave of counterfeit shops hijacking the name across the city. At the same time, strict Supreme Court orders meant to protect the Taj Mahal from pollution have forced historic factories to shut down. The artisans who built this industry are now fighting just to keep the fires burning.
