Gluten Free Chocolate Chip Cookies + A Surrogacy Update

Show-stopping gluten free chocolate chip cookies - not just good for being gluten free, but just plain good! Also - super easy to convert dairy free!! This is a recipe I developed back when I owned a gluten free bakery after tons of trial and error. They are a hit, whether or not you need to be gluten free! Technique is just as important (maybe even more important) so I'm sharing all my tip and tricks too! I also have a surrogacy update to share - we seriously never could have anticipated this.
