What happens when classic Mexican horchata meets traditional mead? In this video, we make a unique Horchata Mead by combining a homemade horchata infusion with honey and wine yeast to create an incredibly smooth, cinnamon-forward honey wine. We walk through the entire process—from soaking rice, almonds, and cinnamon overnight to fermenting, stabilizing, tasting, and discussing what we'd change for future batches. Ingredients 2 cups (0.473 liters) long grain rice 3 oz unsalted slivered almonds: https://amzn.to/4z0CTKt 2 Mexican cinnamon sticks (Canela): https://amzn.to/3RvVNIo 5 cups water (for the horchata infusion) 3 lbs local wildflower honey 64 fl oz water Premier Blanc wine yeast (½ packet): https://amzn.to/4pY3AeN OG 1.118 Additions 1 Tablespoon Vanilla Extract Back Sweeten with Honey to Taste (we went to a gravity reading of 1.042) Pasteurization:    • Easiest Way to Pasteurize Mead, Wine, and ...   City Steading Merchandise: https://briancity-steadingcom-1-shop.... Along the way we discuss fermentation, ingredient choices, stabilization, back sweetening, and whether this experimental recipe was worth making. If you enjoy trying unusual meads or want to experiment with culturally inspired brewing recipes, this one is definitely worth adding to your list. If you've ever brewed horchata mead—or have ideas for other dessert-inspired meads—let us know in the comments! _____________________________________ Become a City Steading VIP - Click to learn more http://www.city-steading.com/vip-club Want more City Steading?
