What happens when classic Mexican horchata meets traditional mead?
In this video, we make a unique Horchata Mead by combining a homemade horchata infusion with honey and wine yeast to create an incredibly smooth, cinnamon-forward honey wine. We walk through the entire process—from soaking rice, almonds, and cinnamon overnight to fermenting, stabilizing, tasting, and discussing what we'd change for future batches.
Ingredients
2 cups (0.473 liters) long grain rice
3 oz unsalted slivered almonds: https://amzn.to/4z0CTKt

This brew has warm cinnamon notes, subtle almond character, and a completely different profile from a traditional mead. Along the way we discuss fermentation, ingredient choices, stabilization, back sweetening, and whether this experimental recipe was worth making.
If you enjoy trying unusual meads or want to experiment with culturally inspired brewing recipes, this one is definitely worth adding to your list.
If you've ever brewed horchata mead—or have ideas for other dessert-inspired meads—let us know in the comments!
