In 2017, Liam and Stevie set up a coffee stall on Brick Lane with a bench made of pallet wood and a two-group machine they plumbed in by hand every morning. "We were the pop-up that stayed up." Nine years later, High Grade Coffee is a café-roastery beneath the old Truman Brewery arch — producing 8.5 to 9 tons of coffee a year from a room roughly 5 by 5 metres, with a team of two (often one). The catch: their café sits inside a Grade 2 listed building, where venting a traditional roaster through the walls simply wasn't allowed.
