Grab that bottle of “maple” syrup off your breakfast table. Now read it closely — because there's a real chance it doesn't contain a single drop of maple. Many cheap “syrups” are mostly corn syrup, colored brown and flavored to taste like the real thing.
Here's why it happens: real maple is genuinely expensive — it takes about 40 gallons of sap to make 1 gallon of syrup. It's so valuable that Canada keeps a strategic reserve — and thieves once stole roughly $18 million of it (the Great Canadian Maple Syrup Heist, which led to real convictions). That value is exactly why cheap imitations exist. And even bottles labeled “pure” have, in documented cases, been quietly stretched with cane or corn sugar — caught by lab isotope testing.
To be fair: “table syrup” is legal, safe, and usually labeled honestly — this is a value and labeling story, not a health scare. The deception lives in the gap between the front of the bottle and your own assumption.
How to buy the real thing: the front should say “pure maple syrup,” the ingredient list should read just “maple syrup,” and expect a real price — suspiciously cheap “maple” is a red flag.
