Vegetable Chop Also known as Chow Chow 12 medium onions — about 4 cups 10 green tomatoes — about 4 cups 1 medium head of cabbage 12 green bell peppers — about 5 1/2 cups 6 red bell peppers — about 2 3/4 cups 1/2 cup salt Remaining Ingredients : 6 cups sugar 2 Tablespoons Mustard Seed 1 Tablespoon Celery Seed 1 1/2 Teaspoon Turmeric 4 cups Vinegar 2 cups water Chop and mix all of your ingredients, and sprinkle with the canning salt. Cover and let sit all day, or overnight. Rinse several times and drain. Wash your jars and get your jars, rings, and lids ready, along with any other canning tools you like to use. Combine the remaining ingredients and pour over vegetables in a large pot. Heat to boiling and let simmer for 3 minutes. Hot pack in your jars to a 1" headspace, debubble with a knife or other tool, and wipe the rims with a wet paper towel, or one dipped in vinegar (your choice). Put your lid and ring on (finger tight), and hot water bath process for 10 minutes. Makes about 8 pints, my mom would say , but I always get more. Thanks, Mom!
