What if one of the people who helped create the idea of Italian cuisine wasn't a chef at all?
In 1891, just 30 years after Italy became a unified country, 71-year-old Pellegrino Artusi self-published "La Scienza in Cucina e l’Arte di Mangiar Bene" (Science in the Kitchen and the Art of Eating Well), a book that would become one of the most important works in Italian culinary history.
But Artusi didn't simply write down his own recipes. He created what we might now call a food community. People from across Italy sent him their family recipes by mail, he tested them, added his own comments and stories, and continued expanding the book through new editions.
In this episode of Local Aromas from Italy, Italian sisters Valeria and Benedetta explore how Pellegrino Artusi helped bring the regional cuisines of a very young Italy together and why we like to think of him as one of the original food bloggers.
We also talk about another cookbook that shaped generations of Italian homes, Ada Boni's "Il Talismano della Felicità", and how recipes continue to travel from cookbooks to family kitchens, from great-grandmothers to grandchildren, and now even into online communities.
In this episode:
🇮🇹 How Pellegrino Artusi helped shape Italian cuisine
📖 Why he self-published his famous cookbook at 71
✉️ How recipes sent by ordinary Italians created an enormous cooking community
🍅 How regional dishes and ingredients traveled across the newly unified Italy
👩🍳 Ada Boni and the cookbook generations of Italian brides received
❤️ Why recipes are one of the ways Italian families pass down love
📝 Why preserving your own family recipes matters
Because Italian cuisine wasn't created by one chef. It grew through thousands of kitchens, families, recipes, and stories passed from one person to another.
And perhaps that's exactly what makes it so special.
