We start by searing the sirloin steaks in a hot pan, building up all those delicious browned bits and flavor in the bottom of the pan. Then we use that flavorful fond to make a homemade onion and mushroom gravy. Once the gravy is ready, the seared steaks go right back into the pan, get nestled down into that gravy, and everything is covered and placed in the oven to cook low and slow for about two hours. Ingredients For the Steak: 1.5 lbs top sirloin steak (cut into portion steaks, ~3/4 to 1-inch thick) 2 tbsp olive oil 1/2 tsp bacon grease 1 tsp garlic powder 1 tsp onion powder Salt and coarse black pepper to taste For the Skillet Gravy: 1 large yellow onion, thinly sliced 8 oz fresh cremini or white button mushrooms, sliced 1 tbsp unsalted butter 2 tbsp all-purpose flour 2 cups beef broth (warm) 1 splash Worcestershire sauce Instructions 1. Prep & Pre-heat: Preheat your oven to 350°F. Pat the sirloin steaks dry with paper towels. Season both sides generously with salt, coarse black pepper, garlic powder, and onion powder. 2. Hard Sear the Bare Beef: Heat 2 tablespoons of olive oil along with 1/2 teaspoon of bacon grease in an oven-safe skillet (like cast iron) over medium-high heat. Once hot, add the steaks and give them a hard sear for about 2 minutes per side to build a deep crust and flavor-packed pan drippings. Remove the steaks from the skillet and set aside on a plate. 3. Sauté the Vegetables: Lower the skillet heat to medium and melt in 1 tablespoon of butter. Add the sliced onions and mushrooms directly into the hot fat and pan drippings. Sauté for 6 to 8 minutes until softened and browned, scraping up any fond stuck to the bottom of the skillet. 4.
