Breakfast Sausage Casserole
1 pound bulk pork sausage
3 teaspoons minced garlic
2-½ cups shredded cheese, divided - I used mostly cheddar, some mozzarrella
1-⅓ cup milk
3 whole eggs
¾ cups biscuit/baking mix - I made some from 1 cup flour, 1 1/2 tsp baking soda, 1/2 tsp salt, and a little butter
¾ teaspoons sage
¼ teaspoons pepper
In a large skillet, cook the sausage over medium heat until no longer pink, then add the garlic and cook 1 more minute. Drain, then stir in 2 cups of the cheese. Transfer everything to a greased 9-inch deep-dish pie plate - I used a 10 inch square baking dish
In a small bowl, combine the milk, eggs, biscuit mix, sage, and pepper, then pour that mixture over the sausage. Bake at 400°F for 20-25 minutes, or until a knife inserted near the center comes out clean.
Sprinkle with the remaining cheese and bake 1-2 minutes longer, until the cheese is melted. Let it stand for 10 minutes before cutting and serving
This was quick and easy, and delicious - a keeper for sure
Update: This turned out to be great - definitely could be for breakfast but I am having it for dinners. I made my own bisquick, with just flour, baking powder and salt and butter, and this with the sage/pepper/eggs/milk made a great bread/crust over the top of the sausage, garlic and cheese. It is pretty high calorie, so I am stretching it out over a few days, but it is delicious, so hard to eat just a little. The original recipe called for monterey jack cheese, but I hate that and never use it, as it seems to have no taste to me, so I used sharp cheddar and some mozzarella - this was great. But obviously use whatever chees you like... It microwaves really well for later days.
