Eggless Atta Walnut Cake Recipe | Soft & Moist Whole Wheat Dry Cake Looking for a delicious homemade cake without maida and eggs? This Eggless Atta Walnut Dry Cake is a perfect treat for your tea-time cravings! Today, at Cocopots Bakers, we're making a delicious whole wheat walnut cake with the goodness of atta and the lovely crunch of walnuts. It's soft, moist, flavourful and perfect for enjoying with your evening tea or coffee. Ingredients: Whole wheat flour (Atta) – 180 g Powdered sugar – 130 g Thick curd – 120 g Oil – 90 ml Milk – 80–100 ml Baking powder – 1 tsp Baking soda – ½ tsp Vanilla essence – 1 tsp Cinnamon powder – ½ tsp Salt – ¼ tsp Chopped walnuts – 70 g Extra walnuts – for topping Method: 1. Preheat the oven to 170°C. Grease and line a 7-inch round cake tin or an 8 × 4-inch loaf tin. 2. In a mixing bowl, whisk together curd, powdered sugar and oil until smooth and well combined. 3. Add vanilla essence and mix. 4. Sieve together whole wheat flour, baking powder, baking soda, cinnamon powder and salt. 5. Add the dry ingredients to the wet mixture and gently combine. 6. Gradually add milk and mix until you get a smooth, thick but flowing cake batter. Adjust the milk quantity as required. 7. Toss the chopped walnuts with 1 tsp of atta and gently fold them into the batter. 8. Pour the batter into the prepared cake tin. 9. Sprinkle extra chopped walnuts on top. 10. Bake at 170°C for approximately 35–45 minutes or until a toothpick inserted in the centre comes out clean. 11. Allow the cake to cool completely before demoulding and slicing. Tips: Do not overmix the batter after adding atta. Do not make the batter too thick, as whole wheat flour absorbs more moisture. Always cool the cake completely before slicing for neat pieces.
