Creamy Southern White Chicken Chili 🍲
Well hey y'all! It’s getting cooler outside, and today we’re making my creamy, flavorful, and delicious White Chicken Chili! What makes this recipe extra special is the shredded Pepper Jack cheese—it gives it the perfect creamy texture and just the right touch of Southern warmth and kick.
Using rotisserie chicken makes this quick, easy, and comforting for chilly evenings!
📖 RECIPE CARD

Servings: 6–8 servings
Ingredients:
1 Rotisserie chicken (meat pulled and chopped into bite-sized pieces)
2 cups Chicken broth (or homemade broth made by simmering the rotisserie carcass + 2 tbsp chicken bouillon)
1 cup Onion, chopped
2 cans (15 oz each) Navy beans (undrained)
1 can (10 oz) Rotel diced tomatoes with mild green chilies
1 can (11 oz) White shoepeg corn (drained)
8 oz Pepper Jack cheese (freshly shredded, plus extra for topping)
1 tbsp + 1 tsp Ground cumin
1 tsp Roasted garlic powder (or minced fresh garlic)
1 tsp Dried oregano
Optional toppings: Fresh or dried parsley, tortilla chips, corn chips, croutons
Directions:
Prepare the Chicken & Broth: Pick meat off the rotisserie chicken and chop into bite-sized pieces. (Tammy's Tip: Simmer the bones/scraps in water to make a rich homemade broth, then stir in chicken bouillon).
Combine: In a large Dutch oven or non-stick pot, combine the chopped chicken, broth/water with bouillon, chopped onion, navy beans (with liquid), Rotel, shoepeg corn, cumin, garlic powder, and oregano.
Simmer: Stir everything together well. Cover with a lid and simmer on medium-low for about 45 to 60 minutes to let all those delicious flavors meld together.
Add Cheese: Turn the heat down low. Stir in the freshly shredded Pepper Jack cheese until completely melted and creamy. (If you want it thicker, reduce the liquid before adding your cheese!)
Serve & Garnish: Ladle into bowls and top with a sprinkle of extra cheese, a dash of parsley, and crunchy tortilla chips or croutons. Enjoy!
