Chiles rellenos de carne y queso. Ingredientes: 9 Chiles poblanos. 700 gramos de carne de res y puerco (50% y 50%). Queso fresco o panela. ¡Buen provecho! ------------------------------------------------------------------------------------------------------- Stuffed Poblano Peppers with Beef and Cheese *Ingredients: 9 Poblano peppers 700 grams (about 1.5 lb) of ground beef and pork (50% beef, 50% pork) Queso fresco or panela cheese 1 cup chopped onion 2 medium cloves of garlic 4–5 whole cloves Pepper to taste 1 plastic bag for placing the peppers inside so they can sweat and be peeled *For the Tomato Sauce: 8 tomatoes, cut into chunks 1/4 onion 2 medium cloves of garlic Salt to taste Oil for frying *Instructions: Prepare the Peppers Roast the poblano peppers over low heat, directly over the flame, so the skins can be removed later. Once the peppers are nicely charred, place them in the plastic bag and let them rest for a few minutes so they can sweat. Prepare the Meat Filling Heat a little oil in a skillet. Add the chopped onion. Once the onion becomes soft and translucent, add the 2 finely chopped cloves of garlic and mix well. Once the garlic is also softened, add the meat and mix. Cover the skillet and let the meat cook. Check and stir the meat periodically so that it cooks evenly. Add the cloves, salt, and pepper to taste. Cover the meat again and let it finish cooking. Once the meat is fully cooked and has released and absorbed its juices, turn off the heat. *Prepare the Tomato Sauce: Blend the chopped tomatoes, onion, and garlic with a small splash of water. Add a little oil to a pot and heat it. Add the blended tomato mixture and stir. Let it simmer and cook until well seasoned. Once it is ready, turn off the heat and cover the pot to keep the sauce warm. Clean and Peel the Peppers Once the peppers have cooled, lightly coat your fingers with oil and remove the charred skin from the peppers. Place the peeled peppers in a container. Once they are peeled, clean the inside to remove the seeds and veins. Make a slit along one side of each pepper and remove the veins and seeds. Finish cleaning the peppers with water to remove any seeds that may still be stuck inside, then let the peppers drain. *(If you think the peppers may be too spicy, add a little salt to the inside of each pepper.) *Assemble the Stuffed Peppers: Meat Filling Take a pepper and fill it with a generous portion of the cooked meat. Cheese Filling Take a pepper and place pieces of cheese inside. Place the stuffed peppers on a plate and, using a spoon, pour as much tomato sauce over them as you like. *You can serve them with rice. Enjoy your meal!
