This easy Egg Fried Rice is packed with flavor and comes together with simple ingredients you probably already have at home.
Fluffy rice is fried with eggs, carrots, green beans, corn, garlic, and green onions, then seasoned with soy sauce and black pepper. To make it even better, we top it with a sunny-side-up egg fried in chili oil for an extra kick of flavor.
For the best texture, use day-old cooked rice — it stays separate and fries beautifully without becoming mushy.

Ingredients
For the Fried Rice
Cooked rice — 250 g / 8.8 oz (about 1½ cups), preferably day-old
Eggs — 2
Carrot — 40 g / 1.4 oz (about ⅓ cup)
Onion — 25 g / 0.9 oz (about 3 tbsp)
Garlic — 5 g / 0.18 oz (about 1 clove)
Green beans — 30 g / 1.1 oz (about ¼ cup)
Freshly cooked corn — 30 g / 1.1 oz (about ¼ cup)
Green onions — 10 g / 0.35 oz (about 2 tbsp)
Soy sauce — 20 ml / 1 tbsp + 1 tsp
Salt — to taste
Freshly ground black pepper — to taste
Vegetable oil, for frying — 50 ml / 3 tbsp + 1 tsp
For Topping
Egg — 1
Chili oil — 20 ml / 1 tbsp + 1 tsp
Instructions
Crack 2 eggs into a bowl and whisk well.
Heat a little vegetable oil in a large pan or wok.
Add the eggs and fry, breaking them up into small pieces in the pan.
Remove the fried eggs from the pan and set aside.
Finely dice the carrot into pieces approximately the size of a grain of rice. Add it to the pan.
Cut the onion in the same way and add it to the pan.
Add the finely chopped garlic.
Cut the green beans into small rings and add them to the vegetables.
Cut the white part of the green onions into rings and add them to the pan.
Add the freshly cooked corn and stir everything together.
Return the fried eggs to the pan.
Add the cooked rice. Day-old rice works best for fried rice.
Season with salt and freshly ground black pepper.
Add the soy sauce and mix everything thoroughly.
Fry for another 3 minutes, stirring regularly.
Cut the green part of the green onions into rings and add them to the rice.
In a separate pan, fry a sunny-side-up egg in chili oil.
Place the fried rice on a plate.
Top with the chili-oil fried egg.
