Taco night. A pound of meat in the skillet, a packet, a cup of water, and twenty minutes later it is gray and swimming. Corazón, you were never frying that meat. You were boiling it.
🔥 THE 6 THINGS
1. THE DIAGNOSIS. A cool or crowded pan cannot drive the water off, so the meat sits in a puddle and turns gray. A hot pan sizzles. A wet pan whispers.
2. CHANGE THE MEAT. Cheap boneless chuck. Law Four: cheap cut, long time, or thin cut, hot fire. Never in between.
3. THE KNIFE FIRST. Firm it in the freezer 20–30 min, slice 1/8–1/4 inch ACROSS the grain.
4. SALT EARLY, LIME LATE. Salt, pepper, chile, a spoon of oil, 20 min in the fridge. No cup of water. Lime at the table.
5. HOT IRON, SMALL BATCHES, HANDS OFF. One layer, 60–90 seconds a side. Thin meat does not need patience; it needs attention.
6. A WARM TORTILLA. Dry comal, under a towel. 1 1/4 oz meat, a small spoon of salsa, onion, cilantro.

1 1/2 lb boneless chuck · 1 1/2 tsp fine salt · 1 tsp black pepper · 1 tsp red chile powder · 1 Tbsp neutral oil · lime. Beef to 145°F, rest 3 min, chop small. 12 small tortillas · 1/2 cup white onion · 1/3 cup cilantro · 3/4 cup salsa.
Leftovers become Tuesday burritos. Nothing leaves this kitchen but the dishes.
