Midsummer Sandwich Cake Full Recipe:
Ingredients:
16 pieces of Icelander bread (Pumpernickel, sweet rye bread)
200 g of cream cheese of your choice or vegan cream cheese
100 g of full fat greek yogurt or vegan yogurt
100 g of soft goat cheese or soft tofu for vegan option
10 g of mayonnaise (or vegan mayo)
1 fully ripe avocado
About 50 g of fresh peas, shelled, o rfrozen peas defrosted
One middle-sized beetroot, baked in the oven
1 tbsp. of canned chanterelles
1-2 new crop carrots
1 tsp. of fresh grated horseradish or horseradish paste or wasabi
Handful of finely chopped dill
Pinch of chopped parsley
Lemon juice
Salt, pepper
For decoration:
edible flowers, herbs, greens
Preparation:
Cut the crust off the bread pieces
Combine cream cheese, yogurt and dill and whisk them until soft and fluffy
Mash avocado, add salt, pepper to taste and a few drops of lemon juice. Shell the peas or defrost frozen ones. You can put them into slightly salted boiling water for 30 sec. and then put them into cold water immediately (not to overcook), then drain.

Grate the carrots, chop chanterells, add parsley and 2 tbsp. of cream cheese/ yogurt mix
Peel and grate baked beetroot (beetroot is baking wrapped in the foil with few drops of olive oil, for about 45 min at 200C, depends on your oven and beetroot's size)
Grate small piece of horseradish root. It would be really good, if the horseradish is fresh, but if it is nowhere to find you can go with the same amount of horseradish paste or wasabi. We need a tablespoon of grated horseradish or same amount of paste.
Combine beets and horseradish, add a pinch of salt, a pinch of black pepper. Than add a goat cheese and combine everything together well
Now start making layers. Make it on a tray that you can easily put in a fridge.
First layer is bread. Take around half glass of water and mix it with a tablespoon of lemon juice. After you lay out first layer of bread (four pieces), moisten them with the lemon water, using the pastry brush.
Then put the layer of carrots and chanterelles. Then goes bread again and repeat moistening. Now goes beetroot layer. Then again bread, moistened. And finally goes avocado and peas layer. Top it with bread. Moister with water and lemon juice mix. Now make the crust, using remaining cream cheese.
Refrigerate for a 8 hours or better overnight to let it set.
