🌿 INGREDIENTS (Tsp = Teaspoon | Tbsp = Tablespoon)
• Mature yellow/brown cucumber – 1 kg
• Mustard oil – ½ cup
• Turmeric powder – 1 tsp
• Red chili powder – 2 tsp (or to taste)
• Cumin powder – 1 tsp
• Mustard Seed Powder – 1 & ½ tsp
• Sichuan Pepper (Timur) Powder – ½ tsp
• Salt – 1½ tsp (or to taste)
🔪 INSTRUCTIONS
1. Wash the cucumber thoroughly and dry it completely to remove all surface moisture.
2. Cut the cucumber into bite-sized chunks, remove the seeds and soft core. Then, make 3-4 slits per piece.
3. Spread the pieces evenly on a tray and sun-dry for a day to reduce moisture.
4.Transfer the sun-dried cucumber pieces into a clean, dry mixing bowl.
5. Heat mustard oil and let it cool.
6. Add the turmeric powder, red chili powder, cumin powder, Sichuan pepper powder, mustard seed powder, salt, and mustard oil.
7. Mix thoroughly until every cucumber piece is evenly coated in the spice oil mixture.
8. Pack the mixture tightly into a clean, completely dry glass jar and seal with a tight lid.
9. Place the jar in direct sunlight for 1 week to allow it to ferment and develop its traditional tangy flavor.
