The Tin Can Came Fifty Years Before Germ Theory In 1810 a Paris confectioner named Nicolas Appert published a method for keeping food for years: bottle it, cork it hard, boil it. It worked from the start. He thought the enemy was air; the chemist Gay-Lussac thought it was oxygen. Both were wrong, and the food kept anyway. With the committee that tasted his bottled milk, the government grant that came with one condition, the forty years of cans without a can opener, Pasteur's swan-necked flask, and the spoiled clams that finally gave the industry a number: 121 °C for ten minutes.
