Recipe – Egg Kali Mirch White Creamy Curry
Ingredients:
6 boiled eggs
2 medium onions, roughly chopped
1 tbsp ginger-garlic paste
2 green chillies
10–12 cashews
½ cup milk
2–3 tbsp fresh cream
½ tsp black pepper powder
½ tsp cumin seeds
½ tsp garam masala
½ tsp coriander powder
2 tbsp oil or butter
Salt as per taste
Fresh coriander for garnishing
Cooking Process:
1. Prepare the eggs: Boil the eggs, peel them and make small cuts on the surface. Lightly fry them in oil with a pinch of salt and black pepper. Keep aside.
2. Prepare the white gravy: Heat oil or butter in a pan. Add chopped onions, green chillies, cashews and ginger-garlic paste. Cook until the onions turn soft and translucent.
3. Make the paste: Allow the mixture to cool slightly. Grind it into a smooth paste using a little water.
4. Cook the gravy: Heat butter in a kadai, add cumin seeds and the prepared paste. Cook on medium flame until the raw smell disappears.
5. Add spices: Add salt, coriander powder, black pepper powder and garam masala. Mix well.
6. Make it creamy: Add milk and fresh cream. Mix gently and cook until the gravy becomes smooth and creamy. Adjust consistency with water if required.
7. Add eggs: Put the fried boiled eggs into the gravy and simmer for 4–5 minutes so they absorb the flavours.
8. Final touch: Finish with freshly crushed black pepper, a little cream and chopped coriander.
Ready to serve!
