今天,我们要去新加坡一家非常有历史的广东菜餐厅 丽华酒家。这也是我们第一次来这里吃午餐。我们从波东巴西地铁站出发,搭乘 13 号巴士,大约四个巴士站后下车,再步行前往餐厅。除了 13 号巴士,你也可以搭 133,147 号巴士。
丽华酒家创立于 1963 年,至今已经有超过 60 年的历史,是新加坡广东菜界的一家老字号。多年来,餐厅一直以传统广东菜闻名,其中包括著名的鱼生和辣椒螃蟹等招牌菜。一走进餐厅,就感觉好像走进了一家充满怀旧气息的老式中餐馆。这里的传统中式装修,让人有一种回到几十年前的感觉,也带着浓浓的老新加坡味道。
大家可以看到,菜单上有超过50道经典广东菜和中式煮炒菜式,选择非常丰富,无论是传统广东菜还是熟悉的本地煮炒风味,都可以找到自己喜欢的菜式。这次午餐,我们点了几道菜一起分享。
第一道是干烧香港伊面,搭配鲜虾、青龙菜和香菇。伊面经过煮炒后,吸收了汤汁和食材的味道,口感和层次都很丰富。
第二道,是来到这里很值得尝试的一道经典广东菜 - 金笼鸡。这是一道著名的传统广东式手工菜。鸡皮需要先经过风干,让鸡皮在烹调之后呈现漂亮的金黄色和酥脆口感。再搭配新鲜现磨的苏东虾胶,而鸡肉的其他部分则切丁后下锅爆炒。整道菜需要经过多个步骤制作,感觉非常讲究。
第三道,我们点了这里的红烧鲍翅汤,这道汤原本是一人份,不过送上桌的时候,我们发现里面的鲍翅分量相当丰富,而且还加入了干贝。因为分量不少,所以我们决定一起分享。
等待上菜的时候,我们看到厨房助理正在现场把腐皮和海鲜馅料慢慢卷起来。这个过程马上吸引了我们的注意力。结果,我们当然也忍不住点了一份!第四道就是香脆炸海鲜腐皮卷,一份有十件。看到厨房助理现场手工制作,反而让我们觉得这道菜更加吸引人。
这次用餐还有一个很有趣的发现。我们看到不少熟客已经提前预订了座位,同时也预先点好了螃蟹、烧鸭、八宝鸭和龙虾拼盘等菜式。看来一些受欢迎的菜品,尤其是在繁忙时段,还是很容易售罄的。我们觉得下一次再来,还是要记得提前订位,也可以预先点一些想吃的招牌菜。
来到丽华酒家,让我们体验到了传统广东菜的味道,也感受到了一份属于老新加坡的怀旧情怀。如果你喜欢老字号餐厅、传统广东菜,以及这种充满历史感的用餐体验,丽华酒家确实是一个值得来探索的地方。
Today, we’re visiting a true Singapore dining institution — Lai Wah Restaurant, a legendary Cantonese restaurant that has been serving traditional Cantonese cuisine for more than 60 years. This is actually our first time having lunch here. We made our way from Potong Pasir MRT Station and took Bus 13. After about four bus stops, we alighted and walked over to the restaurant. Beside Bus 13, You also can take Bus 133 and 147.
Established in 1963, Lai Wah Restaurant has a long history in Singapore’s Cantonese dining scene. Over the decades, it has become well known for its traditional Cantonese dishes, including its famous Yusheng and Chilli Crab. As soon as we stepped inside, it felt like we had travelled back in time. The old-school Chinese restaurant interior has a nostalgic charm that reminds us of the traditional restaurants from decades ago.
As you can see, the menu offers more than 50 classic Cantonese and Zi-Char dishes, with plenty of choices for both traditional favourites and familiar local-style dishes. For lunch, we ordered several dishes to share.
The first dish was the Braised Hong Kong Ee-Fu Noodles, served with prawns, royale chives and mushrooms. The noodles were nicely braised, with the ingredients adding different textures and flavours to every bite.
The second dish is definitely one you should try - the Golden Cage Chicken. This is a famous classic Cantonese handmade dish. The chicken skin is air-dried first, allowing it to become beautifully golden and crispy when cooked. It is then paired with freshly ground sotong and prawn paste, while the remaining chicken meat is diced and wok-fried. It’s quite an interesting dish because so many different elements are prepared separately before being brought together.
For our third dish, we ordered the Braised Superior Sharks' Fins Soup, which is meant to be a one-person serving. But when it arrived, we were pleasantly surprised by the generous amount of sharks' fin and dried scallops inside. Since the portion was quite substantial, we decided to share it between us.
While waiting for our food, we noticed a kitchen assistant carefully rolling beancurd sheets with seafood paste. That immediately caught our attention — and of course, we had to order it! Our fourth dish was the Crispy Beancurd Roll with Seafood Paste, which comes in a serving of ten pieces. Watching it being handmade right in front of us made the dish even more appetising.
One thing we noticed during our visit was that many regular customers had already made reservations and pre-ordered dishes such as crabs, roast duck, eight treasure celestial duck and lobster platters. It looks like these popular dishes can sell out quickly, especially during busy periods. After seeing this, we think we’ll definitely make a reservation and pre-order some of the dishes for our next visit.
For a first visit, Lai Wah Restaurant certainly gave us a taste of traditional Cantonese dining with a touch of old Singapore charm. If you enjoy heritage restaurants and classic Cantonese cuisine, this is definitely a place worth checking out.
