Hi, friends! ❤️ Today I’m making thin, flexible lentil wraps with red lentils and cheddar cheese. They’re delicious on their own, and even better filled with a colorful vegetable and feta spread.
The two main wrap ingredients are lentils and cheese. You’ll also need water, salt, and a little oil for the pan. Watch the folding test at the end and tell me: would you use these instead of a tortilla?

🥣 Lentil wraps — makes 7
1 cup (160 g) dry red lentils
Water for soaking
2/3 cup (160 ml) water for blending
Salt to taste
3.5 oz (100 g) finely grated cheddar cheese
A few more tablespoons of water, as needed
A little vegetable oil to grease the pan
Soak the lentils for several hours, preferably overnight. Rinse and drain. Blend with 2/3 cup of water and salt, then stir in the cheddar. Add a few more tablespoons of water until the mixture resembles pancake batter. Pour thin wraps into a lightly greased, heated pan and cook on both sides until golden. Transfer to a wire rack to cool.
🥗 Vegetable and feta spread
2 tbsp olive oil
1 red onion (100 g)
1 green bell pepper (80 g)
1 zucchini (160 g)
Salt and black pepper to taste
1/2 tsp oregano
6 cherry tomatoes (150 g)
1 tbsp lemon juice
2 garlic cloves
2 tbsp finely chopped dill (about 6 g)
2 tbsp finely chopped parsley (about 8 g)
2.8 oz (80 g) feta cheese
Cook the onion, pepper, and zucchini in the olive oil with salt, pepper, and oregano. Add the tomatoes, lemon juice, and garlic. Transfer the vegetables to a bowl, add the dill, parsley, and feta, and mix well.

1 tbsp vegetable spread
