Trinidad Stew Chicken and White Rice w/Veggies

Thank the heavens for the safe passing of Hurricane Idalia. We got some rain and light winds. I pray all families are well. We are cooking Aniya's favorite meal today for dinner. Trinidad stew Chicken and white rice. The way we brown our chicken is what makes it a yummy dish. I love food from all islands and we all make the same things just a little different. As a born Trinidadian, I am proud to always cook foods from there, even though I am only learning about my heritage in the last few years as I did not grow up there. However food, yes, Trinidad food, spices, heat, beauty, bright colors and big personality has always naturally been my way. I picked up so many other cultures and now I am happy to pick up my birthplace's culture from the Beautiful twin islands of Trinidad and Tobago. I left when I was five and never returned, however in learning about soca music, carnival ( I have never been), and so much about our history, I have fallen in love with my birthplace and plan to go back real soon and take my children.
