Ingredients
For the sponge cake:
5 eggs
50 g granulated sugar
2 tbsp vegetable oil
70 g gluten-free cake flour
1 tsp baking powder
For the filling and topping:
800 g canned fruit
150 g fruit jam
1 liter heavy whipping cream
3 tbsp powdered sugar
2 packages vanilla pudding powder
600 ml milk
100 g granulated sugar
Cocoa powder, for dusting
Preparation
First, we'll make the vanilla pudding. Pour about 400 ml of the 600 ml milk into a saucepan and leave the remaining milk in a bowl. Add two packages of vanilla pudding powder to the milk and mix thoroughly until smooth.
Heat the milk in the saucepan until it comes to a boil. Add 100 g of sugar and then pour in the pudding mixture. Stir continuously until the pudding thickens. Set it aside and let it cool to room temperature.
Now let's make the sponge cake. Beat 5 eggs with 50 g of granulated sugar and 2 tablespoons of vegetable oil until light and fluffy. In a separate bowl, combine 70 g of gluten-free cake flour with 1 teaspoon of baking powder. Add the flour mixture to the whipped egg mixture and gently mix until just combined.
Grease a baking tray with oil and dust it with flour. Pour in the batter and bake at 180°C (350°F) for approximately 15 minutes.
Once the sponge cake has cooled, gently remove the thin top crust. Spread approximately 150 g of jam over the sponge cake and arrange 800 g of fruit on top.
Whip 1 liter of heavy cream until stiff peaks form. Once the cream is whipped, add 3 tablespoons of powdered sugar and gently mix.
Beat the cooled pudding until smooth. Spread the pudding mixture over the fruit, then spread the whipped cream over the pudding. Finally, dust the top with cocoa powder.
Chill well before serving and enjoy this delicious, creamy fruit dessert!
